February 2021 - Soul Food
So, I (Taelor) have decided to try at least 1 new recipe each month and will share my experience on it here with a photo! To start us off in the month of February, in honor of Black History Month, I decided to try some recipes from the "soul food" section of the site. I found several that I wanted to try, but I went with ones that I thought my kids would be most likely to eat, and ones that perhaps you haven't heard of, like myself. I went with THREE different recipes this time. For the main dish I made Dirty Rice, with Buttermilk Corn Bread as a side, and Ambrosia for dessert.
Dirty rice, although not listed as a main dish, but as a side dish, I served it as a main dish since it has both meat and rice in it. My kids are generally pretty picky especially when it comes to vegetables, so I wasn't sure how this one would go over with the celery and onion in it. The recipe did call for green peppers, but since those give me horrific heart burn, I did leave those out as well as the liver (which was optional to start with). Surprisingly my kids LOVED this dish, and so did I. It does have some cajun seasoning, but it wasn't spicy at all, just a teeny nibble of spice. We will be making this one again sometime.
Buttermilk cornbread, that one is a given staple in the south for sure. I knew this one would be good, but this was the first time I ever made cornbread from scratch and not from a box, and I tell you now, I'm never going back. We buttered it and topped it with a bit of honey and we cleared out the whole pan in a couple days.
Ambrosia was our salad/dessert. This one was also a hit for us minus the coconut, we did add it just to follow the recipe. It was just okay with the coconut, our house doesn't usually mind coconut, but it's definitely not our favorite. We love oranges and bananas, and the whipped cream/sour cream mix made it so yummy! We will be making this regularly minus the coconut, and maybe double up on the whip/sour cream mixture because it was so yummy!
